King scallops with a carrot & sauternes puree and a lime and ginger butter

Red wine marinated slow braised welsh ox cheeks on truffle & potato puree


Pan roasted sea bass with sautéed spinach and a shellfish, potato and clam chowder


36 hour cured fillet of salmon with roasted Jerusalem artichokes, pancetta and wild mushroom fricassee


Spinach, pearl barley and wild mushroom strudel with a Perl Las cream
