The Discovery opens its doors

The latest venture from South Wales based food company Knife & Fork Food, The Discovery in Cyncoed, opened its doors last week, following an extensive period of renovation.

The pub, which is Knife & Fork Food’s largest venue yet, follows on from the late 2012 opening of The Pilot in Penarth, which has since gone on to join its sister pub, The Conway in Pontcanna, in the esteemed Michelin Pub Guide.

The last two months has seen both the interior and exterior of The Discovery undergo an extensive aesthetic transformation, that has brought the tired old pub bang up to date, and in keeping with what people want from a modern day local.

Fans of Knife & Fork Food’s other south Wales locations, will appreciate the light filled interiors, quirky design ideas, luxury touches and family friendly atmosphere. The location will retain the original building’s set up with a distinct bar area and restaurant space, designed to appeal to both drinkers and lovers of fine food.

Executive Chef of the Knife & Fork Food group, Stefan Nilsson, will be chalking up locally grown and seasonal produce on the continually evolving blackboard menu. Signature classic dishes from The Conway and The Pilot, including fish and chips and traditional pies, will join dishes inspired by Stefan’s many years working in some of Europe’s leading restaurants, many of which will offer a delicious Welsh twist.

Starters include crispy aromatic duck egg with shitake mushroom, wild garlic puree and onion ash. And mains are equally enticing with a wide variety of choice, from Ras al hannout roasted lamb rump, braised shoulder, smoked aubergine puree and potato press, to the much anticipated ‘Plank of Pig’, as well as Stefan’s quest to ‘Discover the Burger’ and create the ultimate burger (something which has been in development for many years, according to the Swedish Executive Chef).

Desserts don’t disappoint either, with stunning options such as Snickers tart, salt caramel ice cream and peanut brittle.

Drinkers are well catered for as well, with an array of established and niche brands on tap, including BoB, Otley and Purity.

Speaking about the launch of The Discovery, Sean Murphy, Managing Director of Knife & Fork Food said: “Cyncoed has been on our radar for quite some time and I’m delighted that we have secured a fantastic location in order to bring the Knife & Fork Food brand to the east side of Cardiff.
